In response to that oft asked question of what to use to form. If you dont have a couche, use a tea towel.... ! I see a suggestion of using parchment paper, but forming might be an issue. Yes, use parchment.... over a kitchen towel. The towel helps forming and the parchment helps with the sticking. VOILA. Better yet, just get on Amazon and get a baguette form, couche, lame, its all there and cheap. I went to a local stone shop and got a piece of 1/2 inch granite. Best part? It can just stay in the oven. Been doing breads for several years. Sourdough, specialties. What is better than the smell of fresh baked bread in the house?
