Hi Kimberly, it will work with the smaller recipe, but if you want a higher-rising loaf you could certainly scale up your recipe. The lidded 9" pain de mie pan holds recipes with 3-4 cups of flour (about 360g-480g), but if you're not using the lid you can go a little higher.
