Thanks for your feedback, Greg! We tend to categorize the pan size by cups of flour in the recipe because not everyone has a scale or is able to weigh their dough. I think there is also a bit more of a range of weights that will fit in these pans, depending on how high-rising a particular bread recipe happens to be. For example, the Back of the Bag Oatmeal Bread recipe actually produces about 1.75 lbs of dough, which is greater than the weight capacity indicated for either the 8 1/2" X 4 1/2" or the 9" X 5" pans.
