I've been using this recipe for our pizzas for about a year now and they have become legend in our neck of the woods :) I've tried MANY flatbread recipes over the years but nothing beats this one and I've found freezing it and then thawing when I'm in need of flatbread or pizza makes it even better! I usually make the recipe, cut it in half after first rise, place in olive oiled freezer bags and then pop into refrigerator or freezer. Truly, I make it ahead just because it is even better that way.
