Hi Victoria, SAF Instant Premium is best used for doughs with a short fermentation time. You can find more information about it here. For doughs that have a high sugar content, SAF Gold Instant is recommended. Here's a rule of thumb: if the weight of the sugar in your recipe is equal to or greater than 10% of the weight of the flour, SAF Gold is the one to choose.
