I have a quick sour dough recipe that calls for ady in warm water with sugar and potatoes flakes overnight. If all I have is instant yeast, do I still do this, skip step, or do it only for a few hours. I'm sure the instructions help with flavor. Don't want to miss that sour dough flavor.
