Hi Jan! We wouldn't recommend using SAF Gold as your "all-purpose" yeast, it's designed to survive in high sugar environments so outside of that rise times can be impacted. Storing yeast in the freezer extends viability by a year or so, which will give you more time to use the Gold. You could also split a package of SAF Gold with a baker friend! If you only make a couple of sweet loaves a year though, you might also consider just sticking with the SAF Red and just keep in mind that the rise times are going to be longer than listed in the recipe.
