Hi Merle, one type of yeast can't be converted into another type of yeast. If you have Red Star's Quick Rise Yeast, that's the same as Instant Yeast, (like SAF Instant Yeast.) If you have Fleischman's Rapid-Rise yeast, you'll need to use a recipe that's designed for that.
