Hi there, Donna! You're certainly welcome to experiment, but we don't think that the SAF Instant Premium would work well in a bread machine. Because that yeast is formulated to shorten rising times, you'd need to create a custom setting on your machine to reflect that or, as you mentioned, the loaf will rise and fall during the baking process.
