Hi there, Jessica! You sure can test your yeast before you start making your dough! Start by dissolving 1/2 teaspoon sugar in 1/2 cup warm water, then stir in 2 teaspoons instant yeast and let that sit for 10 minutes. If the yeast is viable, it will have started to bubble and expand. If you let it rest for another 10 minutes it will start to dome and rise. If your cinnamon roll dough has 1 tablespoon or more of sugar per cup of flour, we think that should work out just fine to use the SAF Gold yeast. Happy baking! Morgan@KAF
