I've used Fleischman's instant for 43 years and it works. I buy it in a 1lb package from you, store most of it in the freezer, take off about a month's worth and put in the fridge. It works. I'm happy. Lasts forever. A lot cheaper buying in bulk than at the market. For a 1.5 lb loaf (not sweet), I need only a pinch more than a tsp. I think I have a lot of wild yeast in my kitchen.
