Great question Paula! At this time, we hesitate to recommend trying to swap one of our flours for the other in our recipes. Without gluten, recipes really depend on each exact ingredient to achieve the desired result the recipe writer intended. We understand it can be unwieldy to keep multiple gluten-free flours in your pantry at once, it is our aim to provide dependable recipes for as many bakers as possible, no matter their dietary restrictions. The success of these recipes really stems from the trials in our test kitchen where each gluten-free product is very intentionally selected for each recipe.
