Hi Karyn, we recommend using the type of gluten-free flour called for in the recipe. This is because different gluten-free flours are formulated differently (beyond just xanthan gum content) and won't necessarily perform the same way. For example, our Gluten-Free Measure for Measure Flour has more whole grain content than our Gluten-Free All-Purpose Flour and will likely absorb liquid differently.
