Hi, Clara! We have two kinds of gluten-free flours, Gluten-Free Flour and Gluten-Free Measure for Measure Flour. The Gluten-Free Soft Pretzels recipe is calling for the Gluten-Free Flour which doesn't have the xanthan gum in it. The two flours shouldn't be used interchangeably because the amount of xanthan gum in the Gluten-Free Measure for Measure Flour may not be right for the baked good you are making.
