I make your English Muffin Toasting Bread with 60% white whole wheat flour and 40% regular flour. I'd go 100% if I was back at sea level, but at altitude, I just have problems with that. I just have to add more liquid, as you recommend. It is fabulous and I frequently get "requests" from my parents for a loaf of their very own...
