The recipe and this blog have different instructions for adding the soaker. Here it is added with the preferment, versus the recipe which indicates to add it in step 6, with the fig and anise seed. Which is correct?
Also, several of KA sourdough recipes also use instant (commercial) yeast. I'm wondering why and if I can avoid using it? If so, how should I alter any of the steps?
