Hi Megan! Since oil is 100% fat, storing it in the pre-made mix will not cause any problems when added to the dry ingredients if stored for less than 2 weeks. Still, if you would like to store it longer than 2 weeks, you can always add the oil later when you are ready to make pancakes, it's just one more step. Happy baking!
