I have been making this very same bread recipe, minus the refrigeration for a couple of months now. I am a first time bread maker at 61, who always wanted to bake bread but was intimidated by it until I saw the recipe on line. My first attempt was such a success that I have been baking it regularly. Thank you for your additional information, I have been experimenting with it and always with success and you have emboldened me to go further. Now that I know I can refrigerate the dough a whole new world of possibilities has opened up for me.
