If you'd like to maintain a soft crumb from the inside out, skip the steaming/spritzing with water step and simply bake the loaves on a parchment-lined baking sheet. You may also want to brush the top of the loaves with melted butter once they come out of the oven for a soft texture and delicious flavor.
