Kevin, this dough is liable to rise better early in the week rather than towards the end of the week. If your loaves always turn out heavy and dense, this could be a sign that your adding too much flour to the recipe. This is easy to do if you scoop your flour into the cup. For best result we recommend either weighing your ingredients or using this method to measure your flour by volume.
