Oh my word is this excellent! Like—stop what you are doing right now and go make this type of excellent. I was scared that the amount of almond flour would make this texture strange, but it was everything but strange. It was the closest that I have experienced to an actual gluten cake. It was so buttery tasting and the whole cake was GONEEEEEEE! They ate it all in one dinner. I served with strawberries and blueberries and freshly made whipped cream and then I had one tiny piece left over and I wrapped it in plastic wrapped and I froze it to see how this cake would freeze and you won’t believe that it was amazing! I put in microwave for 20 seconds and perfection! No excuse! Just make it, freeze it in pieces if you don’t want to eat the whole thing at once and then bring it out as a treat. So very good. That’s all.
