Hi Maureen, you're welcome to use 3/4 to 1 cup of your dried fruit blend in this cake. You might consider tossing the dried fruit in 1 tablespoon of Gluten-Free Flour before mixing it into the batter. This will help prevent the fruit from sinking to the bottom of the cake.
