King Arthur pie dough accessories have saved the day for me. My daughter is eating gluten free but wanted traditional pecan pie for Thanksgiving. We are Southern and when you bring pecan pie to a gathering, it had better be good; your cooking skills will be judged ;) Unfortunately, I had no gluten free flour mix on hand (I have some on order from you, KA, don't worry). I had oat flour and coconut flour. After much research and finding out that most pie crusts made with coconut flour will burn after a long bake such as pumpkin or pecan pies require, I used my KA silicone pie crust shield and turned down the oven temp five degrees. The shield's flexibility made it easy to drape on the very delicate pie crust. I used the plastic pie dough bag for rolling out, since gluten free dough can be very sticky and very difficult to roll. The bag made it a snap to roll out, and the pie turned out beautifully with a nicely browned crust with no burnt edges at all! Next time, I will be sure to have a spare bag of KA gluten free flour on hand as well. Thanks for saving Thanksgiving KA!
