I always make bake my pecan pie 2 weeks before Thanksgiving. Bake it, cool it for 2 hours, freeze uncovered for three hours, then bag it in a plastic bag. The night before Thanksgiving morning, I take it out of the freezer and let it thaw in the frig. It saves so much time! Good luck!
