There's a pumpkin muffin recipe on this site that has you put down some mix, a ball of sweetened cream cheese, then more mix over it. (2 tbsp, 1 tbsp, 2 tbsp) I made it (in large quantities) and it worked out well, so that same strategy may help here - no stuffing speculoos lumps into a hot oven, maybe collapsing your cupcakes. I did not freeze it, either.
That may completely not translate to this different recipe, I realize.
