You confused me because you kept talking in ounces. The flour is this many ounces, water this many, your sourdough this many. Your recipes however, are in grams (or cups). I mix my sourdough in grams. I don't recall seeing a recipe done in ounces! Can you break it down simply in grams? I weigh everything in grams for a recipe.
