I want to use sourdough DISCARD in a recipe that calls for 3 tsp of commercial yeast (420g flour (mix of ww and bread flr + 170g water). Do I have to reduce the yeast in the recipe? Also, some folks say reduce the flour/water in the recipe by ½ the amount of discard. You disagree with this?
