Nicole, I laughed out loud after reading your comments about it being an overflowing beast, you don't have time to ferment and rise bread for days, and can't consume 2-3 loaves of bread! I'm feeling you and know it is going to be so very worth it to have faith and stay the course to continue learning about sourdough baking because within all of this curiosity a level of wisdom will develop and guide me to see best practices to include sourdough in my diet and not feel overwhelmed by the massive volume of resulting discard and finished bread/baked items produced. In the meantime, my neighbors, colleagues, and friends are benefitting from fresh baked goodness!
