Interesting reading. I'm getting confused though as to how you are using terms - discard, ripe, unripe, fed and unfed . . Would you define a little clearer what these terms mean? For example, when does "fed" starter become "unfed" since it had to be fed at some point in time. Otherwise really useful information.
