Hi Alex, there isn't an exact ratio for fresh yeast, just follow the basic rule of thumb that if a bread recipe is calling for about 3 cups of flour, replace 1 scant cup (113 grams) of the flour and 1/2 cup (113 grams) of the water with 1 cup (226 grams) of your ripe bubbly starter and omit the yeast. Happy experimenting!
