Hi there, Joanne! We would recommend discarding before feedings, this helps to keep the starter balanced and healthy. For more details on our recommended feeding process for a starter, check out our blog article Maintaining your sourdough starter. For a tangier taste in your final loaf, we recommend using a cold fermentation for the first rise when making dough and you can also try using a stiff starter, which helps to promote a tangier flavor in your bread.
