Gregory, those are good questions! Sour flavor is really relative, so you'll want to experiment with your recipes until you find a level of sourness that works for you. If you have a favorite sourdough bread recipe already, looking at the ratio of starter to flour in it would be a great starting place! When it comes to feeding your starter, you can feel free to feed it all-purpose, bread flour, whole wheat flour, or even rye flour.
