I have wondered about using leftover starter also and appreciate this post. I do have a question, as I am have not used sourdough for long; however have baked bread for many years. As this says "unfed" sourdough, why is this, rather than feeding the "leftover" starter to make other items or putting it back in the fridge, fed? I am not familiar with the science of sourdough as far as fed or unfed. Since most recipes call for "fed", i am a little confused. Thank you so much for this information!
