Heather, I wouldn't recommend keeping it longer than a week, since there's always more unfed starter coming your way. We're bakers and not dieticians or doctors, so can't advise you about whether your regular sourdough starter is a safe choice for those with gluten sensitivities, but I imagine it would work in GF recipes as well.
