I feel if I have my cookie doughs in the freezer before Thanksgiving I’ll be OK for Christmas cookies. To be on the ‘safe side’ I make only those cookies that call for refrigeration prior to baking, that way I feel comfortable about freezing the doughs. To be easy on myself, I steer towards ‘slice and bake’ types, forming the dough into long rolls and placing the rolls in paper towel centers to preserve the roll shape then freezing. I also make ‘roll and bake’ cookies, because I usually bake off all the cookies on one day. One day to make and freeze doughs, one day to shape and bake and one day to prepare cookie trays. I usually make about 6 different cookies plus “Magic Cookie Bars”....mini cookies making about 72 plus dozen cookies (l forget how many pounds) and. I decorate the trays with red-green-silver kisses and mini candy canes.
