For me, around 1993, THE book that turn me into bread baking was the wonderful Joe Ortiz book, The Village Baker. Al little hard to follow by a home baker due to the fact that he focuses more in the real bakery than in the home but, the info and quantities that he shows us was enough to start me in the "right" path. I am sure that lots of bakeries were hightly influenced by his book and the books of pastries by his wife.
