I've been reading KAF blogs and learning how to bake from you and the Great British bake-off for about 2 years now. This bread was the most complicated I've tried so far and it came out amazing! I am so happy. Baking XP big time! I found this process to be very meditative... being stuck at home, always thinking about the bread. It was a great focus. Thank you all so much for the great blogs and very detailed instructions. I've learned so much from all of you. I live on the West Coast but buy your flour...shhhh (don't tell Bob's Red Mill). :)
