Hi Tawney, we do have somewhat of a tutorial that walks you through this bread recipe in our Sourdough Baking Guide. I would say when kneading by hand 6-8 minutes should be sufficient. If you're mixing with a stand mixer I would mix for about 2 minutes on the lowest speed to blend all the ingredients except the salt, cover the bowl and let the dough rest for 20 minutes, and then add the salt and mix for 2-3 minutes on speed 2. In step 4 I would do a letter fold as described, and for the preshape and shaping in step 5 and 6 you could either follow the video in our Sourdough Guide, or the Shaping a Boule blog.
