Hi Barb, I have made KAF's Naturally Leavened Sourdough Bread several times now, and it is really a great recipe! I have a couple of questions about the details though. Here they are:
1) How do I know when the dough is kneaded enough but not too much. Do have a video you could share?
2) Step 4 - Give the dough a fold. Do I follow the instructions in the blog post "Shaping a Boule" here? Because steps 5 and 6 also refer to "shaping" the dough into rounds. Or do I follow the steps to do an envelope fold in each of steps 4, 5 and 6?
