Hi Caitlin, if you're baking the loaf minus the 8 ounces of dough to perpetuate the stiff starter, a 3-4-quart Dutch oven will work fine. If you want to bake the entire amount of dough, a 5-quart pot would probably work better. You can also divide the dough into two smaller loaves if you have a smaller pot.
