Hi Fun, you didn't mention what baking method you're using, but if you're baking in a Dutch oven I wouldn't recommend preheating or baking at higher than 450 degrees. You may also find positioning the bread closer to the middle of the oven helpful. It's also possible that you're baking the bread a little longer than is necessary. If you have an instant read thermometer, look for the internal temperature of the loaf to be between 190-195 degrees.
