Hi Nancy, yes, you could form this dough into baguettes, although they won't be quite as airy and light as traditional baguettes. You might also enjoy this Sourdough Baguette recipe. I haven't tried baking with the type of Dutch oven you describe, but I don't see why it wouldn't work. Check with the manufacturer to make sure it's okay to preheat your pot empty, if that's the method you'd like to try. I suspect the heat transfer may be a bit different with this kind of pot, so baking times may be slightly different and you may not need to preheat the pot quite so long. Let us know how it goes!
