Hi Kathy, the quoted wait time for Dutch ovens has more to do with acclimating your pot and dough to room temperature, so that the pot isn't damaged as a result of going from cold to very hot. If this isn't a concern, and your dough looks ready to bake straight from the refrigerator, feel free to bake immediately.
