Liza, we don't recommend preheating empty any of the Dutch ovens we sell because the manufacturers do not recommend this practice. I wouldn't recommend preheating your enameled Dutch oven at all, but follow either the cold start method, or you can place the Dutch oven and risen bread dough in a preheated oven. Both these methods work quite well, and won't damage your new pot. Barb
