I've always been a bit confused... I'm baking on a pizza stone with an inverted Crock-Pot ontop (ghetto Dutch oven). Routine has been: score, spray loaf liberally, transfer to stone, then place preheated crocktop over loaf and xome back in 20. Wondering if this is good, is spraying even necessary for like this? And do people spray before scoring usually and I'm doing this backwards?
