Hi Frank! I think the oil is mostly necessary when you're allowing the dough to rise in the Dutch oven, as this definitely gives the dough a greater opportunity to stick to the pot. I've started using a round of parchment paper on the bottom of the pot and this seems to help prevent sticking as well. I wish there was a way that you could print these posts, but they're really not printer-friendly. You can, however, print the linked recipes. Thanks so much for being such an involved reader!
