This is really helpful. The discussion of the variety of ways the bread can be baked with the pictures of the results is so useful. I have often wondered what a side by side comparison of the various baking techniques (cold oven, hot oven, etc) would look like. Now I know. I prefer to use the cold oven start. Much of the information provided is appropriate for all sorts of rustic bread making. Thanks so much. I am sure I'll refer back to these articles over and over again.
