Hi Jaq, I'm so glad to hear this recipe worked well for you! The hunk of dough you save can get stored in the refrigerator for up to week and functions as your stiff starter. Generally you will want to feed it once or twice after refrigeration to get it nice and active again before you add it to your recipe. However, if it's only been in the fridge for a day or two, it will likely work fine as the starter in your recipe. Just don't forget to save some dough from the next batch!
