Hi Carol, You might want to try lightly sprayed parchment paper on the bottom of your lidded pot as added protection against sticking. When covering rising dough, I've found plastic can sometimes be a necessary evil, especially when the air is very dry in the winter, or I'm refrigerating my shaped loaf overnight. While a couche does provide some protection for rising loaves and baguettes, there are times when a little plastic tucked over the couche is necessary as added protection against drying. Back in my bakery days we cut food safe plastic garbage bags to provide flat sheets of plastic to cover rising loaves, and reused them many times before they were discarded. I find being able to reuse the plastic makes it a little less evil! Similarly, you might want to consider using and reusing disposable shower caps or these reusable bowl covers. Barb
