Hi Travis! Thanks for reaching out...and apologies for not getting a response to you sooner during this busy baking season. We certainly understand that oven space is at a premium during the Holidays. While there is no harm to baking multiple things at once, the main concern we have is going into and out of the oven multiple times while something like a roll recipe bakes. If you can try to limit that during the time the rolls are in the oven, they will have a better chance of baking more evenly. Because you'll have multiple items in the oven, your bake times may be a bit longer and you might have to rotate the pans (especially if your oven has any hotspots).
